2. Preheat an oven to 250°F. Heat a dutch oven (or other oven safe pot) over medium-high heat add two tablespoons of canola oil. Place four short ribs in the pot and cook each side until browned. Remove from heat and set aside. Repeat with additional canola oil and remaining short ribs. 3. Add a tablespoon of canola oil to the pot followed by the garlic, ginger, lemongrass, cinnamon, and any remaining spices. Cook for about three minutes then add daikon, lotus root, and carrot then cook for about five minutes. Add the meat and mix well. Finally, add the shiitake mushrooms and pear. 4. Combine the soy sauce, rice wine and sugar. Pour into the dutch oven and coat ingredients with the sauce. Cover and place in the oven. Cook for at least five hours and up to seven hours, mixing every 90 minutes. The longer the meat cooks, the more tender it will be. 5. Thirty minutes prior to the meat being done, combine the beef broth, kombu, bay leaves, and lemongrass in a pot over low heat. Allow the broth to lightly simmer. Remove short ribs from the oven then ladle two cups of sauce from the pot with the meat into the broth. 6. Divide the rice noodles between the serving bowls. Place one to two pieces of short ribs in each bowl followed by vegetables and broth.
